Note: A Frittata is a crustless quiche. This recipe is to be prepared in a 9 ½ in skillet and serves 4-6 people.

Brown ½ of a tube of pork sausage (or the equivalent of any breakfast meat of your choice) Drain off fat.

Add 1 Cup of Mexicali mix (I get this at Sam’s, it’s a mix of fresh frozen black beans, sweet corn, diced green and red bell peppers.)

Finely chopped green onion to taste.

Finely chopped sun-dried tomatoes to taste.

Wisp 6-7 eggs with 1 tbsp. of cream, salt and pepper to taste.

Optional: add a couple of Teaspoons of powdered guacamole seasoning to eggs.

Pour egg mixture over skillet ingredients. Medium heat. As eggs begin to set, lifting sides to allow mixture to run to the bottom of the skillet.

Once eggs are cooked, cover with 1 ½ of cheddar cheese. Place in oven until cheese is melted. And serve!
