Take 5: Curate


• One cup diced raw shrimp
• ¼ cup shrimp stock (made by boiling shrimp shells)
• 2 teaspoons baking powder
• 2 cups flour
• 2 eggs, well beaten
• 1/2 cup milk
• 1/2 teaspoon salt
• 1/8 teaspoon pepper
• ¼ cup grated sweet onion
• 1 T minced poblano peppers
• 1 teaspoon of sugar
• Oil or fat ( for frying)
1. Combine dry ingredients with a balloon whisk
2. Blend eggs, milk, onion, minced peppers, shrimp stock
3. Fold dry ingredients into wet and stir into a batter that is smooth and free of lumps
4. Fold in shrimp, mixing thoroughly
5. Drop from a spoon into hot fat and fry for about a minute or until golden brown on all sides
