Take 5: Morrison’s Cafeteria

RECIPE

8 cans of salmon
1 pound of onions, minced
12 ounces oil
8 eggs
2 ounces flour
1 pound crushed crackers
1 teaspoon salt
1 teaspoon pepper
Place salmon in mixing bowl. Remove excess skin. Use all liquid and cleaned salmon.
Saute onions in oil until tender. add to salmon. Add eggs, flour, crackers, salt, and pepper to salmon and mix well. Scale patties into 5-ounce portions. Shape patties into an oval shape. Score them gently as you would chopped sirloin.  Yields 33 servings.
