Salmon Patties

Yield: 33 servings

8 (16 oz.) cans of salmon
1 lb of onions minced
12 oz. oil
8 eggs
2 oz. flour
1 lb crushed crackers
1 tsp salt
1 tsp pepper

Open salmon cans—then place in mixing bowl. Remove excess skin. Use all liquid and cleaned salmon. Saute onions in oil until tender. Add to salmon. Add eggs, flour, crackers, salt, pepper to salmon and mix well. Scale patties into 5 oz portions. Shape patties into an oval shape. Score them gently as you would chopped sirloin.
