MUFFIN RECIPE

4 cups flour
1 tbsp. baking powder
1 tsp. salt
2 sticks of butter, softened
2 cups sugar
1 tbsp. vanilla
4 eggs
1 cup buttermilk

Preheat the oven to 350 degrees. Butter and flour muffin tins; set aside. In a large bowl, mix together flour, baking powder, and salt; set aside.

In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until fluffy, about 3 minutes. Add eggs and vanilla; mix until well combined. Reduce speed to low; alternate adding flour mixture and buttermilk to mixer, beginning and ending with flour. Remove bowl from mixer; gently fold in berries by hand. Divide batter among muffin tins; sprinkle generously with sugar. Bake until light golden, about 30 minutes, check with toothpick (when ready, toothpick should come out clean). Let cool 5-10 min before removing from pan.
