Santa Fe Pork Chops

Santa Fe Pork Chop

  • 4 14oz Pork Chops
  • Kosher Salt
  • Chili Powder
  • Vegetable Oil

Heat grill or grill pan on high. Season chops with salt and chili powder then coat with oil. Grill on high heat until 145 internal temperature.
Black Beans and Corn with Chorizo

  • 4oz Ground Chorizo
  • 1lb Dried Black Beans
  • 4oz Diced Onion
  • 4oz Diced Pablano Peppers
  • ½ lb Whole Kernel Corn
  • 2 quarts Water
  • ¼ cup White Vinegar
  • ¼ cup White Wine
  • 2 Tbl Chili Powder

Add vinegar, wine, water and beans and cook until beans are tender. Drain beans and rinse. Brown sausage in lag pot, add onions and peppers and cook another 5 minutes. Add beans, corn and chili powder. Add salt to taste.

Cinco de Mayo Chili Powder

  • 2 oz Guajillo Peppers
  • .5 oz Ancho Peppers
  • 4 oz Paprika
  • 2 oz White Pepper
  • 2 oz Black Pepper
  • 2 oz Granulated Onion
  • 2 oz Granulated Garlic
  • 2 oz Ground Cumin
  • 1 oz Ground Oregano
