Chile Verde From Fuego


Chile Verde
RECIPE: Ingredients:
5 lb diced pork
1 yellow onion, diced
4 garlic cloves
1 jalapeno, diced
10 oz salsa verde, separated
1 tbsp cumin
1 tbsp salt
1 tbsp black pepper
32 oz chicken stock
4 oz flour
4 oz butter
In a heavy bottom pot, add 3 tbsp canola oil and heat over med-high heat. Add pork to brown. Add seasonings. Reduce to medium.
While pork is browning, in a blender puree 2 oz salsa verde, diced onion, garlic, and jalapeno to a smooth puree. Add to browned pork. Cook for 5 minutes, then add chicken stock. Bring to a boil, then reduce to a simmer. Cook for 45 minutes, or until pork is tender.
In a separate small pan, add butter and melt. Add flour to create a roux, stirring frequently. Cook for 5 minutes. Add remaining salsa verde. Stir to incorporate. Add to pork mixture. Cook 15 additional minutes.
Garnish with fresh onion and cilantro, serve with warm corn tortillas.
