Gulf Fish With Local Vegetables and Satsuma Butter

Ingredients:

6 oz fresh gulf fish
1½ cups Local vegetables
1tbsp garlic
1tbsp shallots
2tbsp extra virgin olive oil
2tbsp fresh herbs (thyme, oregano, dill, mint, and parsley)
For Sauce:
1tbsp white wine vinegar
1tbsp lemon and orange juice
½ tbsp cream
1 satsuma ( peeled and segmented)
½ stick of butter

For Fish and Vegetables
Add oil to roasting pan when smoking hot. Add fish seasoned with salt, pepper, and old Bay.
While fish is searing, add vegetables, garlic, shallots and 1 tbsp of herbs. Flip fish and roast in a 350 degree oven for 6- 8 minutes.
For Sauce
Take 1st four sauce ingredients and reduce in sauce pan by half. Then slowly add room temperature butter. Pour sauce over fish and vegetables. Garnish with remaining herbs.
