Corn and Tomatoes and Trains!

Local model train enthusiast Dr. Joaquin Holloway shares his love of trains, and a recipe that may have been served on an old-fashioned dining car. November is National Model Railroading Month. Dr. Holloway took this recipe from the book “Dinner in the Diner”, which resides in his library.

BAKED CORN AND TOMATOES

2 No. 2 canned kernel corn

2 No. 2 canned meat tomatoes
2 med.-size onions, finely chopped
1 level teaspoon sugar
Salt
Pepper
Cracker meal
½ cup of butter

Saute the finely chopped onions in butter, do not brown. Drain the liquid from the corn and tomatoes, chop tomato meat, and mix whole kernel corn, tomatoes and sauteed onions. Add a teaspoon of sugar and season with salt and pepper. Place in a stainless steel roll pan and bake in oven about 20 minutes. Remove from oven, sprinkle with cracker meal, dot with butter, and place back in oven and bake until golden brown. This serves about 20 portions.
