Tomato Artichoke Pie


  • 2 tomatoes sliced
  • 1 cup chopped artichoke hearts
  • ½ cup chopped spinach
  • 1 cup basil mayo
  • 1 cup shredded cheddar cheese
  • 4 slices bacon chopped
  • ½ cup chopped smoked sausage
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 sheet puff pastry
  • 2 egg yolks


Put basil mayo, cheddar, bacon, sausage, salt and pepper in bowl then mix together. Layer tomato slices, artichokes and spinach with the mayo mixture in individual serving dishes. Top with puff pastry cut to size. Brush the puff pastry with egg yolk then bake at 350 for 15 minutes or until brown and bubbly.
