The Chicken Philly


4 oz boneless chicken meat

1 teaspoon of each: salt, black pepper and garlic powder

3 tablespoons oil for frying

1 pita bread

1.5 oz roasted peppers and onions

1 oz roasted button mushrooms

1 oz shredded smoked Gouda cheese

1 oz shredded mozzarella cheese


2.5 oz mayo

0.5 oz chipotle peppers in adobo sauce

1 spring fresh cilantro

Mince the chipotle peppers by knife or food processor, add the mayo and fine diced cilantro. Mix


Season the chicken on both sides with salt, pepper and garlic powder. In a pan cook the chicken on both sides until fully cooked. When the chicken is almost done, cook the peppers, onions and mushrooms in the same pan for a few minutes. Slice the meat thin and place it on pita bread, top with smoked Gouda cheese and then mozzarella. Broil until the cheese is melted or bake 5 minutes at 425 Fahrenheit. Mix all the ingredients for Chipotle Mayo and spread on the sandwich, fold and cut the sandwich in half
